Simple Dinner Ideas + Recipes


Last week I asked my Instagram friends to send me one or more simple dinner ideas because we all struggle with coming up with good meals day in and day out, and you all delivered! Thank you so much to everyone who contributed, this will be a great resource for all of us! I’ll get us started with two of my go-to’s, they are truly simple and taste great.


Veggie Burgers and Sweet Potato “Fries” (@sugarspiceandsparkle)

Dr. Prager Frozen Veggie Burgers (I get mine at Trader Joe’s) made on stovetop (7 min) served on buns with optional avocado. Peel and cube sweet potatoes and toss with olive oil, salt, and pepper. Roast in oven at 350 for 20 minutes.


Teriyaki Chicken (@sugarspiceandsparkle)

Bake marinated teriyaki chicken breast in oven at 350 for 40 minutes. Serve with white rice. Steam frozen edamame in microwave, serve salted. 


Lazy Lasagna (@mrslemaniak)

Ingredients:

-bag of frozen cheese ravioli

-Italian sausage or ground beef

-large jar of pasta sauce

-shredded mozzarella 

Spread sauce on the bottom of your 8x8 pan. Layer frozen ravioli, meat, sauce and repeat. Top with mozzarella. Bake 30-40 minutes at 375.


Chicken Breast (@maryjean89)

Cover chicken breast with hummus and panko breadcrumbs before baking in the oven - super moist and flavorful!


Chicken Veggie Buddha Bowls (@thisholisticnurse)

Ingredients: (she recommends using organic!)

-boneless skinless chicken breast

-chicken broth

Any combo of the following:

-sweet potatoes

-zucchinis

-yellow squash

-asparagus

-Brussels sprouts

-black beans

-basmati rice

-avocado

-salt and pepper

-olive oil

-teriyaki sauce

Cook chicken in crock pot on low 3-4 hours. Prepare veggies by washing and cutting into cubes, place on baking sheets and drizzle with olive oil and salt and pepper. Bake at 425 until done (different veggies take different amounts of time). Season chicken with teriyaki sauce and prepare rice. 


Million Dollar Pasta (@alyssa_121192)

Ingredients:

-1 package cooked pasta

-1 package cream cheese

-mozzarella cheese

-1 jar sauce

Spread cooked pasta in 9x13 pan. Mix cream cheese and sauce and add to pan. Cover with mozzarella and bake at 350 for 20 min.


Chicken Sausage Ravioli (@vanja_j)

Cook pre-packaged ravioli, mix with olive oil and Parmesan. Can add chicken sausage if desired.


Breakfast for dinner (@sarahproefke)

Eggs, Hashbrowns, bacon and sausage, toast, pancakes, waffles, fruit, all the classics!


Chicken Chili (@melissamoo)

Ingredients:

-ground chicken

-garlic and onion (chopped)

-red enchilada sauce

-1 can rotel (drained)

-black beans

-chickpeas

-chili powder

Brown ground chicken, garlic, and onion. Add to pot of remaining ingredients and heat until ready.


Salmon Bake (@melissamoo)

Cover cookie sheet with foil and place salmon and veggies in the middle. Cover with teriyaki sauce (or olive oil and lemon or pesto sauce) and fold foil to cover. Bake 15 minutes at 350. 


Chicken Pesto Orzo (@melissamoo)

Cut chicken breast into cubes and cook on stove top in Italian dressing, salt, and pepper. Prepare orzo in boiling water. Sauté mushrooms in Italian dressing. Combine when cooked and add jar of pesto sauce. Stir to combine.
